Cooking basics for newbies, part 10. Let me show you how to cut an onion. In three different ways, fine dice, sliced and large dice. First step is to make sure you have a sharp knife. For any type of cut, you need to start with chopping off the non-root end, cut it in half down the root and peel it. For finely diced onions, make several vertical cuts across the onion as close to the root as possible. Make two to three horizontal cuts depending on how small or big the onion is. Grip the onion with a claw shape and start slicing downwards to get this fine dice. Once you reach closer to the end, lay it flat and keep cutting. For the sides, just make more vertical slices and cut. For sliced onions, cut the root off and make sure to cut lengthwise across the onion to get almost equal size shapes of sliced onions. For large dice or cubed onions, cut the root off, cut vertical lines with wider spaces between each cut and do the same the other way to get this result.
