When you buy a package of thyme at the grocery store, you end up with way too much, way more than you need in the recipe. So what do you do with all this short of letting it go to waste? What I like to do is actually dump the entire package onto a tray like this and spread it out so that there's a lot of air circulation. You can even have a rack on here if you want. And then you just let it dry at room temperature. It takes about four or five days to dry completely. And then you end up with your very own dried thyme and you just peel it off the stem like that into your little jar and it is so fragrant and so delicious and so much better than any store-bought dried thyme you can buy and it lasts for a year at room temperature. I'm Chef Heidi Finke. The more you learn, the better it tastes.
